The Cucumbers Have Arrived!

Over the summer we will post recipes featuring fresh ingredients that we are growing on Common Good City Farm. Check back weekly to see what we are harvesting! Our cucumber plants are going full steam ahead, we can barely keep up! It can be tricky to find uses for cucumbers once you have exhausted the typical salad topping and eye mask options. Cucumber salsa is a great way to use up the cucumbers you have quickly before more come along. This recipe will have everyone asking for more of this refreshing summer veggie, and luckily, more cucumbers is something we will certainly have! CUCUMBER SALAD WITH JALAPENOS By Caroline Hays Ingredients -1 jalapeño pepper, finely chopped -1-2 cucumbers, diced -1/2 onion, diced -1 tablespoon olive oil -1 tablespoon lime juice -Salt and pepper to taste -Optional: 1/3 cup grated Parmesan cheese -Optional herbs: mint or basil (finely chopped) Instructions 1. Mix together olive oil, lime juice, herbs and Parmesan (if desired) in a large bowl. 2. Add chopped cucumber, pepper, and onion. Toss to combine. 3. Serve chilled. Pairs well with fish dishes, or as a dip with corn chips!
