Recipe of the Week: Cucumber Tomato Salad

At the farm this week, we have an abundance of cucumbers, tomatoes, and basil. What better way to combine them than in a cool, refreshing salad? This salad is easy to prepare and combines many farm-fresh ingredients for the perfect summer side dish. Cucumber Tomato SaladRecipe by Elizabeth Packer Ingredients: 2 cucumbers, chopped 2 large tomatoes, chopped ½ onion, finely chopped 1 cup basil leaves, chopped 1 tablespoon olive oil 2 teaspoons balsamic vinegar Salt and pepper to taste Directions: 1. Mix cucumber, tomato, and onion in a bowl. 2. Combine olive oil, balsamic vinegar, salt and pepper and pour over vegetables. 3. Serve chilled.
