Recipe of the Week: Green Tomato Salsa

As the weather gets colder, many gardens are left with green tomatoes on the vine that just won't ripen. However, unripe green tomatoes can be delicious just like red ones! Green tomatoes are firmer, more tart, and crunchier than red tomatoes, and can be prepared many different ways, such as frying, baking, or pickling. Check out this recipe for green tomato salsa for an easy way to use some of those green tomatoes! Green Tomato Salsa adapted from thekitchn.com Ingredients 5 medium green tomatoes 2 jalapeno peppers 1 small onion 1 garlic clove 2 tablespoons chopped fresh cilantro 1 tablespoon vegetable oil Salt and pepper to taste Instructions 1. Combine all ingredients in blender or food processor; blend until desired consistency. 2. For a chunkier salsa, chop ingredients and mix by hand.
