Recipe of the Week: Eggplant Ratatouille

We have been harvesting a lot of eggplants at the farm this week! Eggplant is a great source of fiber and is often used as a meat substitute in meals. It is also a great source of potassium. Check out this recipe that features eggplant and uses an abundance of other healthy vegetables! Eggplant Ratatouille Ingredients 1 eggplant: washed, sliced thinly 2 green peppers: washed, sliced 2-3 onions: washed, sliced Fresh tomatoes, washed 3-5 carrots: washed, diced 1-2 zucchini or summer squash: washed, sliced 1 Clove of garlic, washed Rice Instructions 1. In a frying pan, sizzle garlic in small amount of cooking oil. 2. Begin sautéing peppers and onions. 3. Add carrots, eggplant, and squash to pan next. 4. Add tomatoes at the end. 5. Serve with rice.
